Jacked Sweet Potatoes

As part of my post-workout carbs I like to stick to so-called „safe starches„. Among them are white rice, white potatoes and the above sweet potatoes.

I got tired of preparing my sweet potatoes by always steaming them. Things needed to be mixed up. I decided to generously cover the unpeeled potatoes in sea salt, rosemary and olive oil and wrap tinfoil around them. Off they went into the oven for 45 min. After unwrapping them and slicing them up they revealed a steaming hot soft puree. The mix of added butter melted wonderfully with the salt and made for a satisfying result.

Simple culinary bliss!
